The Vitamin C Refrigerator

Most refrigerators work to prevent food from losing freshness. A new model refrigerator from Mitsubishi does the opposite: it increases freshness … well, at least for some vegetables and produce, anyway. This new model has an Orange LED located in the vegetable compartment emiting light at 590nm.

The manufacturer states that this 590nm light increases the vitamin C content of (for example) broccoli by 10% … as opposed to a typical drop of about 20% for broccoli that is left in darkness.

This product line is called the “Skillfulness V Refrigerator”, and models “MR-S46NF” and “MR-S40NF” go on sale next month, at least in Japan. In case they don’t make it to North America, I suppose you can just drink more more orange juice.
